Nordic two-day menu inspired by the EAT-Lancet Planetary Health Diet

Axfoundation has developed a Nordic two-day diet inspired by the EAT-Lancet Planetary Health Diet, illustrating how Swedes can eat sustainably — close to today’s habits, yet in balance with the planet.
“We wanted to show that eating for both people and planet is easy, and its full of flavor, varied, nutritious, and delicious,” says Anna Henning Moberg, Head of Operations at Torsåker Farm, Axfoundation's development center for future food and materials.
In line with the EAT-Lancet Planetary Health Diet, the meals emphasize a plant-rich approach where whole grains, fruits, vegetables, nuts, and legumes make up a larger share of what we eat, complemented by moderate or small amounts of fish, dairy, and meat.
Day 1:
Breakfast: Oatmeal with applesauce, crushed hazelnuts, oat milk
Lunch: Whole grain pasta with legume-based Bolognese, grated cheese, and pickled vegetables
Snack: Apple or pear [Not pictured]
Dinner: Fish stew with farmed Arctic char, mussels, and root vegetables/vegetables, with croutons made from leftover bread
Day 2:
Breakfast: Oat-based yogurt with whole grain granola, seeds, and dried fruit; whole grain crispbread with liver pâté and cucumber
Lunch: Potato and leek soup, whole grain sandwich with cream cheese and vegetables
Snack: Kale smoothie with apple, honey, kale, and mint [Not pictured]
Dinner: Stroganoff with chicken sausage and oat rice, served with a raw vegetable salad of red cabbage, carrot, apple, and broccoli
